Great overview! Thank you for writing this down. We’re trying to minimize differences between ODK Collect and Enketo as much as we can. (KoBo Collect is just a re-branded, and usually outdated, version of ODK Collect, I believe).
Let me comment on a few things:
You can also use the same pages mode that ODK Collect has. See Divide a Form into Multiple Pages (TL/DR; in the style column on the settings sheet add "pages")
I think they are functionally similar, but the difference is likely that ODK Collect has a more complete UI language translations and probably for more languages. If anybody wants to help translate Enketo, please do! Enketo Express localization | Transifex
