I am about to start a project using KoBo
After I deployed the survey and started collecting data, will I be able to modify/ add new questions after reviewing few data?
If so, will the new question find its place in dataset and what will be the value noted in that question for earlier responses.

Short answer: Yes, you can modify / add / delete questions in your existing form. And the new questions for the earlier responses will be blank.
However depending on your data collection method, your calcuations, repeat-groups there are some things you need to consider. You can check here:
