I’d like to edit a submitted form (adding options to one of the questions) without influencing the already collected data

You can do this. But you should not change names of existing choices and keep names unique. You would then be able to ecport all data even without all versions option. Create first a clone of your form, please, and check it with some test cases, before and after your change.
Hints:
- Do systematic pretests before starting data collection, please, incl. data export (and import to other tools)…
- We also recommend to always use the Online validator to check your form, during development any before deployment.
