How can I change the Owner of a project if that person has left our organisation without providing us the access to change ownership? It is making it difficult to make some changes as a shared user.

Welcome back to the community, @esuinao_mne! As of now, we do not have this feature yet. Hence, you will need to contact the previous owner to hand over the account to you.
However, we do have this feature request:
Maybe you can VOTE to make this a reality in the near future.
