Do you tend to use ‘numerical values’ or text for the ‘name’ (xml-value) of each answer option (e…g yes=1, no=2 etc or yes, no.) in the choices-sheet? I am wondering what is easier for the data analysis? Any recommendations?

We prefer numerical in general.
For data with ordinal, interval and ratio measurement you would even need numeric coding for analysis. (See https://en.m.wikipedia.org/wiki/Level_of_measurement).

In addition to what @wroos has indicated, i.e.
I would emphasize that the variable type i.e. numerical or text/string is entirely dependent on your intended analysis. If you do not have a pre-established analysis plan, I would strongly suggest that you work with integer/numeric settings. This is because most analysis software applications do not allow numeric functions for string data.
