For those looking to generate reports from KoBotoolBox Data via API, I have found JasperReports Server a good fit in terms of an open source tool chain. See bitnami/jasperreports for a viable Docker implementation that I use to serve reports.
Setup was a bit painful behind jwilder/nginx-proxy. Also, JasperReports has a steep learning curve but Jaspersoft Studio helps to abstract tedious code generation to a GUI that includes a fair amount of capability. Organizations looking for a robust way to present KoBotoolBox data may want to consider JasperReports.
