Translating the project title and alphabetically ordering translations

I have a survey form in English which is been translated into several languages. For example, to French. This means I will have two language choices, English and French. The project title is Rural Livelihoods. How to have a French translation for this while maintaining the English one? Because when I edit the English title to French under settings, I will see a French title. However, if I select English as the language for answering the questions, I still see the title in French. Second, under choices, some labels are no long in alphabetical order after translating them from English. Is there a way to alphabetically order labels for the translations while maintaining that in English?
